Hey my lovely viewers! Welcome to Kanak's Kitchen Today I am going to show you a very simple and versatile soup that is like by almost everyone that is Tomato and Basil soup This soup is prepared using lots of fresh tomatoes and basil with flavours in it and it comes out really creamy and delicious.

So let's quickly see what you need for preparing this simple and delicious soup Ingredients First I am going to heat a wok with some butter Once the butter is melted, add the cumin seeds and stir fry it.

When they start to crackle, add in the garlic Again fry it for a while, next goes in the onions Saute this until the onions become slightly tender Do not make it very dark.

Next goes in the potatoes Carrots, capsicum, mix it well and let it cook for a min Now I am going to add in the tomatoes Stir well adding some stock or water at this point Once it comes to a boil, I am going to cover it with a lid Keep this mixture on low flame to cook for around 8-10 minutes.

Now remove the lid and check You can adjust the water or stock as per your need Add in the salt, pepper, sugar, and the basil leaves Stir it well, now let it cook for some more time You can also use emersion hand blender to puree this mixture completely.

Once it is pureed nicely, strain the mixture.

Once it is strained, bring it back onto the wok, on medium high heat Let it come to a good boil To this, stir in the cornflour mixed water, and again boil it completely.

Let it come to a boil until you get the desired consistency and the thickness.

You can see the thickness and the consistency.

It's ready now I am going to serve it hot with some black pepper Fresh cream, and a basil leaf on the side.

So my creamy and healthy tomato and basil soup is ready.

It tastes best when it is served piping hot with some golden brown bread crumbs on the side So do try this soup for this coming winters and let me know how it turned out for you.
