And today, it's taco time! But not the kind of tacos you might be thinkingabout.
Today we're making high protein, raw, vegan tacos.
And you're never gonna know whenyour snack attack hits, so the trick is to prepare your nut meat ahead of time.
What's"Nutmeat" you might ask? That's a good question.
Nutmeat is half a cup of almonds, half a cupof pecans, 1 tbsp of cumin, 1 tbsp of coriander, 3/4 tsp salt, and 1 tsp of chili powder.
Processit in a food processor, until it's a coarse meal and drizzle in a 1/4 cup of olive oilto bind it all together.
And there you have it, you have nutmeat that you can keep inyour fridge for up to a week, for anytime your snack attack hits.
This is what yournutmeat should look like, and it smells delicious.
So I'm ready to build some tacos.
So we startwith a fresh, crisp piece of romaine lettuce which we've already prepared and washed.
SoI'm going to take some nutmeat and just load it in there, top it with your favourite freshvegetables, jarred salsa, whatever you have on hand.
I made some homemade pico de gallo,but whatever you like.
And of course, avocado, which I love.
And oh, this looks so good,time to take a bite.
