Com/travel/story/20150415-the-quest-for-the-perfect-pad-thai Thai Words of the Day:Pad = Stir-fry Thai = IndependenceGoong = Shrimp Ingredients: (serving size: 2)Must Haves: (basic ingredients) 6 oz Thin rice noodle8 jumbo shrimps, shelled and cleaned ¼ cup extra firm tofu, small diced1 shallot, finely diced (can be substituted w/ 1 tablespoon onion)3 tablespoons palm sugar (can be substituted w/ regular white sugar)3 tablespoons fish sauce 2 tablespoons tamarind paste1 lime, cut half 1 cup bean sprout½ cup chives, cut about 2 inch long 2 eggs3 tablespoons roasted peanut, crushed 3 tablespoons vegetable oil⅕ cup water Secret Ingredients:(not necessary, but nice additions for authentic taste)2 tablespoons dried shrimp 2 tablespoon preserved radish, finely chopped How to Cook:Soak noodle in warm water for about 10 minutes.

Drain the water immediately after.

Mix seasonings: fish sauce, palm sugar, tamarind together in a bowl and set aside.

High heat a wok and add 2 tablespoons oil for 30 seconds-1minsFry dried shrimp until golden then transfer them to a plateFry tofu until golden then transfer them in a plateFry shrimp for about 1 minute then transfer them in a plateAdd 1 tablespoon oil, shallot, preserved radish.

Let them cook for 1 minute.

Add noodle.

Stir until noodles become soft then add seasonings.

Add eggs on the side of the noodle (IMPORTANT – Make sure you do not put egg on top of thenoodle).

Let the egg cook itself for 1 minute (DO NOT stir during this time).

Add water and add back dried shrimp and tofu.

Then add chives and bean sprout.

Stir allingredients together quickly.

Serve with crushed roasted peanut on top andhalf lime on the side.
