How To Make Red Bean Paste Persimmon Cakes-Asian Food recipes

Hi friends it's that time of year for fresh ripe persimmons.

Today we are making delicious Asian Persimmon Cakes with a sweet Red Bean Paste filling.

For the sweet Red Bean Paste you will need Azuki Red Beans, Vegetable Shortening, Salt, Sugar and Water.

for the Cake Dough you would need, All-Purpose Flour pureed Persimmons, Salt and Sugar.

First soak the Azuki Red Beans in room temperature water of eight (8) hours or longer.

After eight (8) hours wash and rinse the beans.

Now in a large pot on high-heat add water, soaked red beans and salt.

once the beans begin to boil reduce to low-heat and simmer for 2 hours until the beans are soft and tender.

Now add in the vegetable shortening and sugar, mix together.

Making sure to cook out all the liquid.

The cooked Azuki red beans should look like this.

Now place the cooked beans into a processor and blend into a smooth paste.

Ok friends now we're ready to make our cake dough.

In a large bowl combine all-purpose flour with salt, and sugar mix together together.

Now add in the pureed persimmons mix the ingredients into a dough ball.

Now on a floured surface roll out the dough ball and cut into 1/2 inch sections.

now flatten out the sections.

now place one (1) large tablespoon scoop of bean paste filling into the of the center flattened dough.

tightly close the dough ball and gently press.

Now we're ready to cook our persimmon cakes.

In a medium pan on medium heat fry the Persimmon cakes until golden brown.
