Hi friends my name is Mai today we are baking delicious mandarin orange cheesecake cupcakes.
For the cheesecake filling you will need cream cheese, eggs, sugar, vanilla, and mandarin orange juice.
for the graham cracker crust you will need graham cracker crumbs, unsalted butter melted and brown sugar.
For the mandarin orange curd topping you will need, sugar, unsalted butter cubes, egg yolks, mandarin orange juice.
and mandarin orange zest.
You will also need a cupcake pan and liners.
First we are going to make cheesecake cupcakes topping.
In a medium bowl combine egg yolks egg yolks.
sugar, mandarin orange juice and mandarin orange zest mix together.
using a double boiler cook the topping until it thickens.
Make sure to cook the topping on high heat.
One the topping thickens remove from heat.
unsalted butter one cube at a time.
cover with plastic wrap refrigerate for one hour.
Now lets make the graham cracker crust.
preheat the oven to 350 degrees in a medium bowl combine graham cracker crumbs with brown sugar, mix together with brown sugar, mix together and unsalted butter melted.
using a tablespoon scoop in some graham cracker mixture.
Use the spoon to firmly pack the graham cracker mixture.
bake the graham cracker crust @ 350degrees for five minutes.
Now decrease the oven temperature to 300 degrees.
Now the cream cheese filling.
In a large bowl combine cream cheese, cream the cream cheese.
Add eggs one at a time.
Sugar, vanilla extract and mandarin orange juice.
mandarin orange juice.
blend until creamy.
now add one scoop of cheesecake filling.
bake the cupcakes @ 300 degrees for eighteen minutes.
let the cupcakes cool for one hour before adding the topping.
Once the cream cheese cupcakes have cooled add the mandarin orange add the mandarin orange topping.
garnish with a wedge of mandarin orange.
