This has to be one of my all-timefavorites.
Vegetable fried rice! I'm Tess and welcome to my kitchen.
With making vegetable fried rice you need to plan a little ahead.
You want to have your vegetables cleaned and ready to cook as the stirfry goes very quickly! You want to have everything at hand.
This is a jasmine rice that I cookedyesterday, chilled overnight and now I'm bringing up to room temperature.
If Icooked the rice and used it right away, it would be all clumpy.
This way theindividual grains of the rice are fluffy and will fry well.

I have my wok on medium heat and adding a couple tablespoons of avocado oil.
Avocado oil is healthy and will hold upwell to the high cooking temps.
Giving my two eggs a good whisk and cooking for a minute or two until I I chop them up fine.
After a couple minutes and remove the eggs and set them to the side.
In my clean wok on high heat I'm adding acouple tablespoons of oil , a cup of diced onions, a tablespoon of mincedgarlic, a cup of diced celery, carrots, and bell peppers.
Giving that a good toss forthree to five minutes.
I have my vegetables diced fairly small so it won't take long.
This is optional but I'm adding atablespoon finely diced red chili for some heat.
Also adding four chopped white garden onions and I'll be using the greens a little later.

Next I am adding some frozen peas for alittle pop! Stirring and cooking for a minute and then in goes the rest of myingredients.
Adding the rice, eggs, lots of fresh chopped green onions, soy sauce and oyster sauce.
You can find all these ingredients at your local grocery store.
I wish you could smell this! Giving this a good toss to make sure everything ismixed well and the rice is coated.
One last thing and that's about a teaspoon of sesame oil.
You want to add this at the end and notmuch of it.
One more toss and were ready to eat! This vegetable fried rice is easy,healthy and delicious, and did I say addicting?!!! Way better than your take out.
This is something you can prep ahead and just throw together when you're ready.
Use the veggies you have on hand and ofcourse, you can add chicken, pork, beef, seafood, or tofu.
