This is a Chinese chicken vermicelli dinner and I will show you how to make this easy, healthy and yummy Chinese stir fry.
I'm Tess and welcome to my kitchen.
This Chinese vermicelli stir-fry is very much similar to a Chinese fried rice.
There are many many different brands.
As you can see, the noodles are glassy and very very fine.
To rehydrate the vermicelli, I'm pouring very hot water over the noodles so they are covered.
The instructions say to soak the noodles for about five minutes but I usually let them go for about 10 to 15 minutes.
The vermicelli will soften and become very pliable.
After soaking I will drain and rinse them under cold water.
You will see there are still a tad firm but, don't worry.
they will finish cooking in the stir-fry.
I used one chicken breast and sliced into small thin pieces.
To the chicken I'm adding some soy sauce, Shao Hsing wine, or you can use rice vinegar, and one medium egg white.
Giving that a good mix and setting to the side until I prep my veggies and preheat my wok.
I'm using my wok tonight but you can use any pan for this stir-fry.
On medium-high heat I'm adding a little oil and two beaten eggs.
cooking and chopping until you have small fine pieces.
This will only take about two to three minutes.
After the eggs are done, remove from the pan.
Next is the chicken.
I have my heat on high and I'm adding 2 to 3 tablespoons of oil and then the chicken.
Just spreading out the chicken as much as I can and letting it cook for about 20 to 30 seconds before stirring.
This will help brown the chicken and prevent sticking.
The chicken will take about three to five minutes to cook and once done remove from the pan.
And now the vegetables! And let's put this stir-fry altogether! I have my heat on high and I'm adding 2 to 3 tablespoons of oil.
You can use any veggies you have on hand.
You just want to cut the veggies into small matchstick pieces, julienne, so they cook quickly and mix well with the vermicelli.
I'm adding in some onions, carrots and I have some mushrooms I need to use.
And in goes some green and red bell peppers.
Stirring and cooking for one to two minutes.
Stir-frys go quickly so you want to have everything prepped and ready beforehand.
Next I'm adding in some minced garlic and ginger.
Stirring and cooking for another 20 to 30 seconds.
In goes the vermicelli, eggs, chicken.
green onions, and I'm adding some soy sauce and a little bit of oyster sauce.
And now the fun part.
stirring and mixing everything together! Just take your time flipping and stirring in circles in the middle with your spatula.
This seems to work well.
Stir and cook for 2 to 3 more minutes.
You will see the vermicelli will soften more and become al dente.
