Tonight for supper I am making Fiesta chicken.
It is quick, easy and yummy! I'm Tess and welcome to my kitchen.
Let's get started making this easyone-pot Fiesta chicken.
In my skillet I'm adding 2 to 3 tablespoons of olive oiland about two pounds of cubed chicken breast.
You can use thighs and in factthat probably would add a lot more flavor.
Adding some salt and pepper andcooking until the chicken is no longer pink and that takes about five minutes.
Now I'm adding 1 cup of chopped onion and one cup of bell pepper.
Giving that atoss and cooking for a couple minutes before adding my spices.
In goes two cloves of minced garlic, 1teaspoon of chili powder.
one quarter teaspoon of cumin and 1 teaspoon oforegano.
You can substitute the chili powder, cumin and oregano for yourfavorite Mexican or taco seasoning.
Giving that a toss around the pan andletting that cook for about 5 minutes at a medium summer.
Letting the meat andveggies absorb all those flavors.

Next goes in one cup of your favoritesalsa and I'm using a medium chunky salsa.
Here is where you can add moreheat if you wish.
You can even add a minced jalapeno for more zest.
I'm also adding 1 cup of diced freshtomatoes which will add a little more liquid.
MMMmmmmm, it is smelling good! Giving that agood mix and letting that simmer for a couple minutes until the tomatoesbreakdown.
It's getting better! I'm adding 1 cup ofcorn and I'm using fresh corn but you can use canned or frozen.
Also adding onecan of rinsed and drained black beans.
Giving that another good mix and lettingit cook for 23 minutes.
This Fiesta chicken is so quick and easy.

And we're almost done! Only five to sevenmore minutes I'm adding a quarter cup of fresh chopped green onions and a quartercup of fresh chopped parsley for some freshness.
You can add cilantro also.
Adding a half a cup of sour cream and.
hold on! Four ounces of cream cheese.
Youcan add the entire eight ounce bar if you wish but I think a half is enoughfor us.
It is rich and creamy! Turn the heat to low and stir until the cheese isall melted.
Give it a taste test and adjust any of the seasonings.
This creamy Mexican Fiesta chicken canbe ready in 30 to 40 minutes.
You can serve with rice, inside enchiladas ortonight I'm serving with some egg noodles.
The chicken is nice and tender with allthe flavors of the veggies, and a rich creamy Mexican sauce that melts into theegg noodles! YUMMY! Topping with some fresh chopped green onions and parsley.
