Almost Raw Veggie Noodle Soup Ingredients:Vermicelli Noodles1 Vegan Bouillon cube1 tsp of Ginger1/4 Cup of Mushrooms1/4 Cup of Sweet Peppers1 Cup of Bean Sprouts1 Cup of Romaine Lettuce1/4 Cup of Radish3 Cups of Hot WaterOptional: Lime Juice and Sesame Seeds In a medium pot, dissolve 1 bouillon cube in 1 cup of hot water and mix well.
Add all ingredients to the pot – Vermicelli Noodles, Ginger, Mushrooms, Sweet Peppers, Bean Sprouts, Romaine Lettuce and Radish.
Add 2 cups of hot water.
Cover the pot with a lid for 5 minutes to lightly wilt the veggies and soften the noodles.
Stir, serve and enjoy! Optional: Top with sesame seeds and lime juice for extra flavour.
