Alfredo Pasta, Italian Pasta,Rotini pasta in Tamil-With English Subtitles

Hello Friends, I am going to prepare Italian Pasta called Alfredo Pasta Children like these pasta varieties.

Among Italian dishes like pizza,breads,pasta is an simple dish to prepare Lets see what are needed to prepare this pasta Firstly I have boiled 6 cups of water in a pot You need 500ml of milk 500gms of Rotini pasta There are many varieties in pasta like farfella, fettuccini,shells,macroni.

But today I am using Rotini 1 tsp Italian seasoning,salt,1/2 tsp black pepper(white preferred),red chilly flakes,2tbsp all purpose flour and shredded mozarella cheese You can take any kind of vegetables you prefer,but I have taken 3tbsp mixed frozen vegetable, 2 tbsp broccoli, 1tsp red pepper,1/2 tsp garlic paste and 1/2 onion chopped In the pot of boiling water add 1 tsp of salt and 1 tsp of olive oil Add the pasta to it and let it boil for 5 -8 mins,stirring in between Do not close with a lid,let it boil in an open pot Meantime lets prepare the vegetables Add 1 tsp of olive oil and heat,do not use the regular cooking oil Add garlic paste and fry 1 min Add onion, i have used white onion as I want the pasta in white.

After 2 mins add frozen mixed vegetables After 2 mins add little water and salt to it as shown, I am going to add the broccoli and red pepper later Do not overcook the vegetables as it has to be little crunchy Now close the lid After 2 mins add broccoli and red pepper Add required salt for the vegetable Keep in low medium heat and close with a lid for again 2 mins Here pasta is boiling, stir in between.

It has to cook for some more time It has to boil for minimum 8 mins The vegetables are cooked here.

Keep it aside.

Oops!!! Skip this After 8 mins, check whether it is in right consistency.

Put few pasta in water and press with your fingers ,it must be soft but should not break as shown Now switch off the heat, strain the water in a colander and pass cool water on it.

Here I have taken half the quantity of cooked pasta, i.

Add olive oil to pasta and mix well Keep aside In a pan add 2tsp butter Keep the heat in low medium and let the butter melt Add all purpose flour to the melted butter Mix well continously Add the milk very little as shown Iam using pasteurized milk, if not must use boiled milk Keep stirring nor lumps will form Again I repeat keep in low heat and stir well At this stage add the remaining milk I have used 2 cups milk now After adding milk keep heat to medium Keep stirring I have used 2tbsp all pupose flour for 2 cups milk Add 1/2 tsp salt to the sauce Add pepper powder and red chilly flakes This has been for 3 mins.

This sauce and boiled pasta can be kept in refridgerator for upto 3 days and can be used.

This is the consistency of the sauce as shown Add the cooked vegetables to it.

Add the pasta It has been mixed well Add the shredded cheese to it You can add cheese as much as you want or completely skip The cheese is melted now, switch off the heat and lastly add the Italian seasoning to it.
