And I'm Alejandra.
And today we're making African Peanut Butter Soup.
This is one of my favorite recipes from the PeanutButter & Co.
It's a delicious, great soup to have especially in the winter.
We have some garlic and onions which I've already been sauteing in some vegetable oil,we have a can of crushed tomatoes with their juice, some salt and pepper, some cumin andcoriander, and a little bit of cayenne pepper, some sweet potato that we've diced, and ofcourse the most important ingredient, the Smooth Operator, and some chicken stock.
Sohere we have our garlic and onion sauteing and we get to add the peanut butter straightaway.
A big generous amount 'cause that's where this nutty, creamy flavor is gonna comefrom.
So I just am gonna stir this in until it's just a little bit melted.
I think thatmakes it a little bit easier to add your stock.
And here we go, I'm gonna add some stock,just stir it in.
You can go ahead and add those tomatoes, and then we're gonna tossin the rest of these spices.
Again, we have some salt and pepper, cayenne, cumin, coriander.
That's what's so cool about this soup, you get a lot, a lot of flavors right away.
Coriander is really nice in that.
And we go ahead and toss this sweet potato inhere.
Then all we're gonna do here, it's very very easy, we're gonna bring it to a simmerand then simmer for 45 minutes.
So this had been simmering for 45 minutes.
It's thickened upa little bit, our sweet potatoes are tender, and that's exactly what you're looking for.
And you know, I think this would freeze really, really well.
So those of you who really liketo make things in advance this is a big batch of soup that's super delicious.
So here, I'mgonna plate up some for us.

Which is a nice cooling flavor for the cayenneand other spicy things we have going on.
