of roasted coriander seeds, 1 tsp.
of roasted cumin seeds, 10 dried chillies, 1 tsp.
of table salt, 1 tsp.
of chopped galangal, 1 tbsp.
of shopped lemon grass 1 tsp.
of kaffir lime rind, 1 tbsp.
of coriander root, 1 tsp.
of pepper corns, 3 tbsp.
of chopped shallots, 1/4 cup of chopped garlic, 1 tsp.
of shrimp paste, and 2 tbsp.
of ground roasted peanuts.
For the MixtureIngredients: 4 cups of coconut milk, 1/2 kgs.
of prawn, 1/4 cup of sweet basil, 4 kiffir lime leaves, 5 yellow, red and green chillies, 2 tbsp.
of Bhanaeng curry paste, 2 tbsp.
of fish sauce, 2 tbsp.
of jaggery and 2 tbsp.
of tamarind juice.
Preparation: Divide coconut milk in half.
Curry paste from the Bhanaeng curry paste ingredients.
Pound all ingredients until ground.
Then fry it with hot coconut milk until it well mixed.
Put prawns that has been shelled and washed add kaffir lime leaves stir it for a while and add more coconut milk.
The amount of water in this curry will not be as much as a usual Thai curry.
While stirring the curry, add tamarind juice, jaggery, and fish sauce.
And when the prawns are cooked, turn off the heat.
Garnish wih colourful chillies, sweet basil For the coconut milk sauce on the Shrimp Curry, we mix 1/4 cup coconut milk and 1 tbsp.
rice flour Mix them together with a small amount of hot water, and stir it until it's well mixed.
Pour it over the shrimps, and sprinkle with shreded kaffir lime leaves.
