Tom Yam Kung (Sour Pawn Soup) Ingredients: 1/2 kg.
king prawns 2 stalks lemon grasses 5 kaffir lime leaves 2 tbsp.
coriander leaves 8 small hot chillies 10 rings of galanga 1/2 cup of mushrooms 2 tbsp.
fried curried sauce 3 tbsp.
fish sauce 3 tbsp.
lime juice 2 tsp.
sugar Remove the shell of the king prawns and cut off their backs and guts.
Put the prawns in boiling water Add the lemon grass and galanga.
Simmer until prawns are cooked.
After boiling for a while, add the kaffir lime leaves.
Make sure to clean it first and tear the leaf removing the center part.
When the prawns are cooked add fish sauce, lime juice, small amout of sugar, fried curry sauce, which already been melted.
If you prefer another taste, after mixing all the ingredients we can add some skimmed milk.
Add small hot chillis, (pressed) and mushroom.
When prawns are well cooked, remove from the heat.
The taste should be dominantly sour.
Serve it hot.
Sprinkle with chopped coriander leaves.
